Used as a fruit, rhubarb is actualy a vegetable belonging to the sorrel family. Only the stalks of Rhubarb are eaten as the leaves can be poisonous. Rhubarb are perennial and once established they will reward with many years of delicious stalks.
Stalks are red and very thick with a rich spicy flavour. Use for deserts, pies and preserves.
